Unexpected Green Leads to Cordial

In my city dwelling lifestyle, up here in the sky, I didn’t expect to have so much green growing in my apartment. (I don’t even have a patio!) But, I moved from one high up dwelling to another in June, and since have fully dedicated a corner to the plants. Almost exclusively herbs, as it turns out – nothing at all being planned.

The project I’d like to highlight today came out of too much lemon balm and NO idea what to do with it. Luckily the internet came through quickly with many lists of lovely options. Specifically I liked the idea of a Lemon Balm Cordial (#9 on Kathie Lapcevic’s list for those of you following along at home).

I didn’t realize this would make a worthwhile post until I’d already picked enough leaves to fill my bottle, but as you can see there is still PLENTY to go around. (Don’t be fooled by the mint in the back, that is growing out of control as well – though I have more experience utilizing that in infused sugar, mojitos, and the like).

Once filling the bottle with leaves and vodka, I’m ready to let it sit for a month in a dark place, “shaking whenever I remember to do so”. Will post an update then!
